Aachari Bell Pepper Pie and Weekend by the Beach...........................

Oh how much i miss blogging........i wish i could blog everyday but life thinks otherwise.....being a full time mom is no piece of cake......it takes up most of your time but in between wen i do get time i indulge in things i love and cooking is my new found passion....... saw this recipe on Star Plus’s new show “Pankaj Ka Zayka”. Though this dish was slightly made in a more elaborate manner there I tried to make it in a more healthier manner in  shorter time…………….so presenting to u all is my take on achaari paneer bell pepper pie.........it tastes absolutely divine and though it requires a bit of time...its very easy to make!!!!(ps...........if u wanna create a special meal for a loved one......this one's definitely worth a try) so without much ado.....here is what u would require for the dish......
For making the pie....
  • 750gms sifted flour(refrigerate for atleast 30 min
  • Ice cold water
  • Olive oil for spraying the baking dish
Pour the ice cold water gently into the flour and mix them lightly with hand till the mixture can be taken into the hand without sticking onto the dish. Cover the flour mixture with transparent plastic sheet and refrigerate for 15 min or so. Select a quiche making dish for baking the pie, if you have normal glass baking round dish that too would work. Spray olive oil/canola oil all over the baking dish.  Divide the flour mixture into two halves .Make a thick roti out of one half and stick it to the baking dish with the help of water. A inverted saucer shaped effect is wat we are trying to achieve here! Hope this makes it easier for you pplJ. Cut thin even rectangular flour stripes out of the remaining flour mixture for covering the pie later. Preheat the oven to 180 centigrade for about 15 min. Now bake the pie basket for atlest 20-25 min or till it turns golden brown.

For making the Filling
  •  Tablespoon of Olive oil/canola oil.
  •  3 tablespoons of Acchar Masala(Mango Pickle/Mixed Pickle)
  • 1 Red, Green and Yellow Bell peppers each cut into square pieces.
  • 1 Large onion cut into even roundlets.
  • Half a cup cottage cheese cut into square pieces.
  •  Handful of shredded Mozzarella cheese.
  •  1 Teaspoon of Turmeric Powder.
  • 1 Teaspoon Red Chilli Powder.
  •  Pinch of Salt.
  • Half a cup Hung curd.
  •  A Teaspoon of Anardana Powder/Pomegranate Powder.
  •  A Teaspoon of Zeera/Cumin seeds.
Heat a tablespoon of olive oil in the pan and add zeera to the oil. When the zeera starts to spurt add the onions to the pan and cook till they turn transparent. Now add the achaar masala to the onions and cook for a minute or so. Now add the bell peppers and paneer to the mixture. Add turmeric, Red Chilli Powder, Salt and anardana to the mixture and cook for 5 to 7 min. Now add the curd to the mixture and cook for 10 min by covering the lid of the pan. Finally add mozzarella cheese to the mixture. Cook for a min or so and remove the mixture from the flame.  Do not overlook the veggies for they would be cooked again when baked in the pie.
Now add the filling to the inverted saucer shaped pie basket. Arrange the thin & even rectangular shaped flour stripes into a zig zag shape (Refer to the picJ).
Bake the pie for about 10-15 min or till the zig zag shaped stripes turn golden. Remove from the oven and serve with tomato ketchup or pasta sauce. A methodical but easy dish………….

Apart from this had a super duper weekend fun with a visit to Sorrento & Port Sea where the views and the climate was just amazing!!!Here are some picsJ………….
