Okay so its been ages since i blogged last........Got busy with studying and other uninteresting stuff but one thing that really kept me engaged during this time was cooking. Cooking is therapeutic for me and i have discovered recently that it is one thing i just can't get bored of........
So here's starting a culinary journey where i attempt to share the joy that cooking can bring and waiting for some suggestions and comments along the way.
I am starting the food quest with the favourite chicken recipe and though i plan to write about "The Butter Chicken",i am starting with a much healthier and easy on the stomach recipe for chicken, The Methi Chicken or the Fenugreek Chicken.

Main Ingredients

Chicken Thigh fillets(1/2 kg) -Skin removed
Onions (pureed -1.5 number)
Tomatoes(pureed - 2 number)
Ginger Garlic Paste (1.5 teaspoons)
Kasoori Methi (2.5 -3 teaspoons)
Chopped Fresh coriander leaves (a few of them)
Turmeric Powder ( 2 teaspoons)
Coriander Powder (2 teaspoons)
Garam Masala (1.5 teaspoons)
Cumin (1.5-2 teaspoons)
Curry Leaves( 2 number)
Salt to taste
Beaten Curd( 1/2 cup)
Vegetable oil- (1.5 tablespoons- i used olive oil, u can use any oil according to your preference)

Cut the chicken into  equal medium sized pieces,  Add oil in the pan and let it heat for 2 minutes. The best way to check if the oil is hot enough is  to add a few cumin seeds.If the seeds start spluttering the oil is ready.Add cumin seeds and curry leaves into the oil and let it cook for a minute or so. now add the pureed onions and let it cook for 5-7 minutes on a medium flame. when the onions start to get dark golden brown they are ready.Now add ginger garlic paste and saute the mixture for a minute or so. Next add the chicken pieces and let it cook for 5-7 minutes. To this add the tomato puree and cook for 4-5 minutes more. The best way to see if the chicken mix is cooked is the pieces would change colour from pink to whitish cream colour. Now add the turmeric powder,corriander powder and coat the chicken pieces well with the mixture.Cook the mixture for 1-2 minutes. if the mixture seems too dry,add half a cup water. Now add garam masala and let it cook for a minute or so. Turn the gas flame to the lowest and add curd and salt to the mixture.Cover the pan and let it cook for 4-5 minutes more. Now add the kasoori methi and fresh coriander leaves to the mixture and let it simmer for 2 minutes or so!
Deal done, the awesome smelling chicken is ready to eat.Enjoy with roti or rice as per your preference.Try and let me know how did it go :)



Notes: 
U must add the chicken pieces before adding the tomatoes because otherwise they turn into rubber like texture which is not desirable.
