Winter's favourite food with a twist-Saag Chicken
I just love spinach and totally relish the sarson da saag and aloo palak. Recently i came across the chicken version of saag(spinach). There are almost 15-20 different versions of saag chicken using exotic ingredients available on net so i decided to give the recipe a try with a bit of modification. My version is rather simple with easily available ingredients at home.
So without much ado i start with the main ingredients:
Main Ingredients
Spinach (150gms- blanched)
Boneless Chicken thigh fillets cut into medium chunks( skin off- 1/2 kg)
Pureed onions( medium- 2 no)
Ginger garlic paste(2 teaspoons)
Cumin seeds(2 teaspoons)
Pureed Tomato(medium-2 no)
Turmeric powder(1 1/2 teaspoon)
Coriander powder(2 teaspoons)
Garam Masala( 3/4 teaspoons)
Salt to taste.
Vegetable oil(3 tablespoons)
Water(1 cup)
Cream/Malai to garnish(2 teaspoons)
The recipe can be divided in two steps:
Cooking the chicken
Put 1 tablespoon of oil in the pan and heat for a 1-2 minutes. Now add the chicken pieces and let it cook for 6-8 minutes with the lid closed. An indication that the chicken is cooked is it turns cream white colour. Now remove the lid and let the chicken get rid of the excess moisture. Remove any excess fat that has come out of the chicken. Keep aside till the spinach is cooked.
Cooking the spinach and assembling the chicken
Put 2 tablespoons of oil in the pan and heat for three to four minutes. Now check the oil by adding few cumin seeds. If the oil starts to splutter, the oil is ready.Add the cumin seeds and stir for a min.Now add the onions and let it fry for 10-12 minutes on a sim flame. Stir occasionaly to avoid burning of the mixture. An indication that the onions are ready is that they turn dark golden brown. Puree the blanched spinach by adding a little water in the blender. Now add the spinach to the mixture and cook for 5-6 minutes.Next add the ginger garlic paste and cook it for 1-2 minutes. To this add the tomatoes and cook for 4-5 minutes. Now add the spices, salt and water to the mixture and cook for 5-6 minutes. Lastly add the chicken pieces and cook by keeping the lid on the pan for atleast 6-7 minutes. Finish by adding the cream to the mixture and immediately turn off the gas. Yummy Saag chicken is ready to be eaten!
